The setup visit to Hyderabad turned into a lesson in everything she did not know about kitchens.
Padma's six kitchens served corporate lunches, wedding feasts, a school, a hospital canteen. Each ran on its own habits, its own chaos. The hospital kitchen had a head cook named Raju who had worked there for twenty-two years and who looked at her phone as if it were a small hostile animal.
"I do not need an app," he said. "I know what to cook."
"Of course you do," Meera said. "I only want to see how."
He gave her a long, grudging look and let her follow him through a morning. She watched him judge a sack of rice by the sound it made when he shook it. She watched him tell a young cook that the sambar was a minute from ready, and be right. She watched him write the day's orders on a calendar from a spice shop.
At the end she said, "What would make the day easier?"
Raju thought for a long time. "If I knew how many patients are being discharged before noon," he said at last. "I cook for thirty who have gone home."
That was not a forecast. That was a phone call to the ward. She wrote it down anyway.
